Willows are not often thought of as a source of food, but their distillate/hydrosol is used as a flavoring, similar to rose water, and sold for this purpose.

"Pussy Willow Water" was purchased at a Middle Eastern grocery. It has a delicious cooling flavor reminiscent of wintergreen.
