The almond is a stone fruit (Prunus) grown for the stone itself rather than the fleshy covering of the drupe.

Mature almond kernels are usually roasted and this is what most people are familiar with as "almonds". But the kernel can also be eaten raw at an immature stage and this "green almond" is quite a different kind of food - jelly-like, and with a mild vegetal flavor like broccoli or something.
