Good King Henry is a perennial leaf & inflorescence vegetable in the amaranth family. The leaves are edible raw but not pleasant to eat, being significantly more bitter and acrid than spinach.

Keenan has not had the opportunity to harvest enough leaves to cook, or to try the young flower shoot, which is said to resemble asparagus.
