Keenan has eaten lato that came packaged in brine. The plant swells when you put it in fresh water (as expected from osmosis) but retains a lot of salt unless you soak it in the fresh water for days. The texture is excellent, it is like boba/caviar and the whole stem and everything is tender. It has an intense flavor "like the ocean" - not just salty or umami but a low-tide, barnacles sort of flavor.
