Skinned, cut salsify roots canned in brine were purchased at a supermarket (Rainbow Grocery). They have a very mild flavor and a texture similar to palm hearts or non-fibrous bamboo shoots. Delicious with a bit of olive oil and salt, and would be good in a salad.
